Always, both inside and outside our kitchen, we champion the mindful selection of ingredients, driven by choosing local products and small or medium-sized producers. When we seek out the authentic flavours of our tradition, we look for those old-school tastes, the ones that carry the scent of a traditional deli, to bring all that classic flavour back in a modern way to our restaurant in the historic centre of Bologna, where life moves at a frantic pace.

Traditional roman products

Roman flavour is a blend of unmistakable emotions, a union of the love we put into our cooking and a selection of special ingredients that represent our history and the land we come from.

Some of our delicacies include:

  • Pecorino: straight from the capital, its robust personality gives that unique character to our dishes.
  • Guanciale: also sourced from the lands around Amatrice, it adds an enveloping, unmistakable savoury flavour to our pasta dishes like gricia, carbonara, and vignarola.
  • L’ovo: or rather, the egg. Eggs are the beating heart of Lazio’s regional cuisine, and even here in Bologna, we source them locally with zero food miles.
  • Puntarelle: a refined chicory variety with a crunchy texture and a slightly bitter edge. Qua nun se scappa—there is no compromising here: ours arrive directly from Rome.
  • Artichokes: together with puntarelle, they are the pride and joy of our winter side dishes. Savoury and intriguing, they have always been among the absolute most loved and sought-after dishes on the menu.
  • Abbacchio: a hallmark of roman cuisine, this traditional main course is an absolute must-try. It is suckling lamb with a beautifully delicate, juicy flavour, often chosen to celebrate special occasions. Here, we play our ace and keep things easy by relying on our trusted butcher, located just a short walk from our restaurant at the Mercato delle Erbe. Macelleria Petroniana is a real point of reference for us here in Bologna.
