The courgette flowers we use are selected based on the flawless judgement of our very own Flavio, who closely oversees every step. Our suppliers come from local sources here in Bologna or directly from the capital.
Over the years we have explored various paths and products, and this experience allows us to constantly bring brilliant new additions to your plates.
Preparing stuffed courgette flowers
The recipe for our battered courgette flowers is pure, simple indulgence. They are quick to prepare, which means we can bring a 100% fresh product straight to your table.
We start by gently cleaning and opening the courgette flowers from the top. We add a small piece of mozzarella, prepped and ready beside us, and place it inside the flower, along with an anchovy fillet for a savoury, light summer flavour.
We close the flowers by gently twisting the tip and pressing slightly so they stay sealed, then leave them to rest so the ingredients can mingle and bind their flavours. Meanwhile, we prepare a simple batter to use later.
When it is time to cook (and in our case, yes, the moment you order), we dip the flowers into the batter and deep-fry them immediately.
Time to serve: once golden and crisp, we take them out of the fryer, drain the excess oil, and serve them piping hot so that, when you take a bite, the mozzarella is beautifully stringy and the batter incredibly fragrant.
How to pair them at the table?
We recommend trying them to kick things off in style, exactly as a starter or alongside an aperitivo, ahead of lunch or dinner. For a more convivial starter, we suggest pairing them with mozzarella in carrozza or our stringy supplì, so you can share it all in good company!
Courgette flowers are also perfect as a side dish, served alongside our cacio e pepe or a fresh plate of baccalà alla romana.
